  • 1 cup gluten-free sourdough starter
  • 2 cups gluten-free flour blend (make sure it includes xanthan gum or guar gum)
  • 1 cup warm water
  • 1 teaspoon salt

  1. In a large mixing bowl, combine the gluten-free sourdough starter, gluten-free flour blend, warm water, and salt. Mix until a dough forms.

  2. Cover the bowl with a clean kitchen towel and let it sit at room temperature for 8-12 hours or overnight. The dough should double in size.

  3. Preheat your oven to 425°F (218°C) and place a Dutch oven with the lid, in the oven to preheat.

  4. Once the oven is preheated, carefully remove the Dutch oven from the oven and remove the lid. Dust the bottom of the Dutch oven with a little bit of gluten-free flour.

  5. Gently shape the dough into a round loaf and place it in the Dutch oven. Cover the Dutch oven with the lid and place it back in the oven.

  6. Bake the bread for 30 minutes covered, then remove the lid and bake for an additional 15-20 minutes, or until the bread is golden brown and sounds hollow when tapped.

  7. Remove the bread from the oven and let it cool on a wire rack before slicing and serving
